Well, my take is that he didn't go insane because to him there were no more than a few hours between leaving his team and coming back out of the cold store, and most of that was spent trying to explain himself in 1901. :) Jack does keel over when he "dies" so in this situation, once the weight of the earth is too much to allow sufficient repair, he's just going to stay squished and unaware until the weight is removed. Which is where the bunny came from - the mythology of Arthur sleeping beneath the earth until he is needed once more just seemed to fit nicely with Jack's situation in the episode.
